Three funds, with no market watching/timing, is barely more complicated than one.
VT would make more sense as a single equities fund, and there are ETFs that include bonds as well, like AOA, AOR, and target date funds for tax advantaged accounts -- making it as easy as "just VOO".
"S&P500 alone" is a better choice than sector or individual stock picking, but it's not the end all answer.
